Mediterranean plate of grilled vegetables with a Feta Rice Burger and an olive dip

Aubergine/Eggplant slices, 5 mm 0.500 kg
Tricolore peppers, 2 x 2 cm 0.800 kg

Fennel, quartered 0.500 kg

Red onion peeled 0.300 kg
Cherry tomatoes on the vine 0.500 kg

Preparation

Preparation:
• Prepare all the ingredients
• Cut the fennel quarters in two or three depending on their size
• Cut the onions into quarters and separate the layers into individual leaves
• Slice the garlic cloves thinly
• Cut the bread into slices
• Finely chop the olives, and mix with the lemon zest, yoghurt and dill

Method:
• Grill the vegetables
• Briefly heat the olive oil with the garlic
• Put the vegetables without the cherry tomatoes into GN trays and mix with the olive oil, chopped herbs, salt and pepper
• Cook the vegetables in a preheated combisteamer at 130°C with hot air for 5 minutes, then carefully add the tomatoes
• Cook the Feta Burgers and the rice in a preheated combisteamer at 180°C and hot air for about 18 minutes until crunchy
• At the same time, grill the bread slices
• Plate all the ingredients
• Serve with the olive/yoghurt dip

Suggestion:
• The vegetables can also be served slightly warm…during the hot days of summer.
