Preparation
Brain Food: our recipe for performing well in the afternoonPreparation:
• Assemble all the ingredients and check that they are vegan
• Cook the sweet potatoes al dente in water or steamed
• Peat galangal and chop it finely. Cut the lemongrass in lengths
• Brown the broken walnuts in the oven or in a greased frypan
Method:
• Heat the Rapeseed and Sesame oils in a heavy-based pot or wok
• Sweat the onions, carrots, celery and leeks
• Add the garlic and the galangal
• Sweat with the curry powder and the cinnamon, then cover with the vegetable bouillon. Add the lemongrass
• Cook the vegetables al dente.
• Cook the ravioli according to the preparation instructions
• Add to sweet potatoes to make a soup and add salt and pepper
• Dress the soup aesthetically in a bowl. Place the ravioli on it and finish, by sprinkling with lemongrass, walnuts and fresh coriander
