Floury potatoes, peeled, 3 mm slices 3.250 kg
Oat drink (sugar-free) 1.800 l
Flora Professional Plant for cooking 15% (vegan, allergen & palm oil-free) 0.180 l
Garlic, chopped 0.010 kg

White pepper, fresh from the mill 0.002 kg
Ground nutmeg 0.003 kg
Grated cheese alternative vegan 0.150 kg

Preparation

• Prepare all the ingredients

Method:
• In a wok, large skillet or similar bring the oat drink to the boil
• Season with salt, pepper and nutmeg
• Add the potatoes and gently stir with a spatula, whilst bringing to the boil
• Let simmer gently for around 5 minutes
• Transfer into GN trays and sprinkle with the cheese substitute
• Put the GN trays in a combisteamer oven preheated with hot air at 180°C for 20 minutes

Suggestion:
• For each GN 1/1 tray put 4,850kg of layered potatoes, sprinkled with 150g of cheese
• Depending on the supplier, the starch of the potatoes can be faded. If so, just bind the dish with a suitable starch
• Depending on the type of vegan grated cheese, a higher temperature may be needed to achieve a golden brown on the cheese
