Preparation
Mise en place :• Préparer tous les ingrédients.
• Defrost the spinach and press out a little of the moisture
• Rince the chickpeas in a strainer under running water
• Finely chop the peanuts
• Strip the coriander and finely chop it with the soybean sprouts, capsicum in cubes and the peanuts
Method:
• In a wok or similar, heat the sesame oil
• Lightly cook the onions and the curry paste
• Add the garlic and the ginger and gently cook
• Add the coconut milk and season with the bouillon powder and the lemon juice
• Reduce by half
• Add the spinach and chickpeas. Mix and bring briefly to the boil and bind
• At the same time, cook the Lentil Balls and the pasta
o Put the Balls onto cooking plates and cook in a preheated hot air oven at 180°C for 8
minutes until crusty
o Cook the pasta at 95°C and 100% steam in a combisteamer for around 8 minutes
• Plate the spinach and pasta and garnish with the balls and the marinated sprouts
Suggestion:
• For this plate the spinach can also be replaced by silver beet
• Put the defrosted balls on a skewer and cook like a brochette
