Method:
• Put the garlic cloves in the olive oil in an appropriate pot
• Heat the olive oil over low heat and cook the garlic cloves at low heat for 20 minutes
• Reduce the garlic oil and purée and let cool
• Pour the mayonnaise into a bowl and slowly incorporate the garlic oil, bit by bit
• Season with the salt
Suggestion:
• Bring the oil and garlic to the boil and then cook it in a preheated combisteamer at 130°C for 20 minutes
• During the last 5 minutes of cooking, add a little rosemary or thyme. Remove this before puréeing
