Preparation:• Prepare all the ingredients
Method:
• Put the grated cheese, the saffron and the water in a pot
• Bring to the boil, stirring from time to time and then let simmer at a medium temperature until the cheese forms a smooth mass
• Take the cheese mass out of the pot, strain in a fine strainer and spread the still warm mass finely between two sheets of baking paper
• Let dry in an oven with hot air at 75 °C for 4 hours
• Break crackers and cook them in a fryer at 180°C for 30 seconds
• Let them drain on kitchen paper
Suggestion:
• This gives the « crack » effect to any pasta dish!
