Preparation

The Banh Mi is the ultimate in fusion cooking ! During the colonial period, the French introduced the baguette to Indochina, where it has since been used as a base food, garnished with specialities from Asia and the South-East. It’s become the perfect streetfood!

Preparation:
• Prepare all the ingredients
• Pickles
o Put the vegetables in a bowl and mix them with the sugar and the sea salt
o Add the rice vinegar, and let sit for 30 minutes
• Preparing the tofu
o Cut the tofu into 1cm slices
o Mix the ginger with the soy sauce
o Add the tofu slices to the ginger sauce and let sit for at least 15 minutes
• BBQ Mayonnaise
o Mix the mayonnaise, the ketchup and the powdered smoked paprika

Method:
• Cook the baguette according to the instructions, until crusty
• Remove the tofu from the marinade and coat with the cornflour
• Brown the tofu slices over moderate heat in the peanut oil for 10 minutes on each side
• Cut the baguette lengthways and grill for 1 minute in an unoiled pan (cut side down)
• Garnish with cucumber slices, the tofu, gherkin and jalapenos. Finish with the bbq mayonnaise, the Sriracha sauce and the coriander

Suggestion:
• Try also by replacing the tofu with The Green Mountain Plant Based Chicken Fillet.
