Preparation
Preparation:• Prepare all the ingredients
• Prepare the tomato sauce according to the recipe
Preparation for cold delivery
Pasta and sauce mixed
• For each GN 1/1 tray, mix 2kg of pasta with 1.6l of sauce and pour into a GN tray
• Deliver the Bites and the mozzarella pearls according to the house concept
• In the delivery kitchen, cook the Bites in a preheated combisteamer for 10 minutes at 180°C with hot air
• In the delivery kitchen, cook the pasta in a preheated combisteamer for 8 minutes at 130°C and 100% steam and garnish with the mozzarella pearls
Pasta and sauce separate
• For each GN 1/1 tray, pour 50ml of rapeseed oil and 2kg of pasta and mix
• Deliver the Bites, the sauce and the mozzarella pearls according to the house concept
• In the delivery kitchen, cook the pasta in a preheated combisteamer for 3 minutes at 95°C and 100% steam
• In the delivery kitchen cook the Bites in a preheated combisteamer for 10 minutes at 180°C with hot air
• Heat the sauce and garnish with the mozzarella pearls
Preparation for hot delivery Cook and Serve

• Mix 2kg of frozen pasta and 1.6l of sauce and pour it into a GN tray and heat it in a preheated combisteamer for 8 minutes at 130°C and 100% steam and place in preheated hotboxes
• Cook the Bites in a preheated combisteamer for 10 minutes at 180°C with hot air and place in hotboxes
• Deliver the mozzarella pearls according to the house concept
Pasta and sauce separate
• In each GN 1/1 tray, pour 50ml of rapeseed oil and 2kg of pasta and mix and cook in a combisteamer for 3 minutes at 95°C and 100% steam
• Cook the Bites in a preheated combisteamer for 10 minutes at 180°C with hot air and place in preheated hotboxes
• Deliver the sauce and the mozzarella pearls according to the house concept
