Preparation

Preparation:
• Prepare all the ingredients
• Cut the cherry tomatoes into quarters
• Prepare the squeezer with mustard and dill:
o Mix the alternative sour cream, mustard, dill, and the first quantity of lemon juice, pepper and salt
• Prepare the celeriac and apple salad:
o Mix the soy yoghurt, the second quantity of lemon juice, the chives and the salt and pepper
• Mix the julienned celeriac and the diced apples and season with the soy yoghurt vinaigrette
• Cucumber Relish
o Finely chop the gherkins
o Mix these with the chopped onions, sugar, and the agave syrup

Method:
• At the same time, cook the sticks
o In a combisteamer at 180°C with hot air for around 14 minutes until crunchy
or
o In a rapid cooker oven for 30 seconds at 270°C, 100% air flow and 0% microwaves and 1:30 minutes at 270°C, 80% air flow and 100% microwaves and 40 seconds at 270°C,
100% air flow and 0% microwaves
• Fill the sandwich :
o Spread the mustard and dill on the bottom of the bread
o Place some spinach salad on top
o Then add some celeriac and apple salad on the spinach
o Place the Ocean Sticks on top
o Add some relish
o Garnish with the fried onions, cress, and some cherry tomato quarters
o Place the top on the sandwich, slightly slanted
• Ready to serve

• As ordered, in a rapid cooker oven for 45 seconds at 270°C, 30%
Air flow and 100% microwaves to make it crunchy
