Preparation
Preparation:• Harissa Dip: mix the harissa, the sour cream alternative, the olive oil and the cane sugar
• Yoghurt Dip: mix the soy yoghurt, lemon juice and zest, concentrated agave juice, pepper and salt
• Cook the baguette according to the recipe
Method:
• Cook the falafels
o In a combisteamer at 180°C with hot air for 10 minutes until crunchy
or
o In a rapid cooker oven for 30 seconds at 270°C, 100% air flow and 0% microwaves & 1:40 minutes at 270°C, 60% air flow and 100% microwaves & 20 seconds at 270°C,100% air flow 0% microwaves
• Cut the baguette in two lengthways
• Spread the yoghurt dip on the bottom of the baguette
• Add the rocket
• Then add the cucumber and tomato slices intermittently
• Then the aubergine slices
• Then put the falafels on top
• Garnish with the raisins and the harissa dip
• Put the top on the baguette
• Ready to serve

• On order in a rapid cooker oven for 45 seconds at 260°C, 20% air flow and 100% microwaves, to make it crunchy
