Preparation
Preparation:• Prepare all the ingredients
• Prepare the bolognaise sauce according to the recipe
• Prepare the bechamel sauce according to the recipe
• Mix the two sorts of cheese
Method:
• Prepare the two hot sauces
• Prepare the lasagne GN 1/1 as follows :
o Baste the GN tray with 5 g olive oil
o Add 200g of bechamel and spread it evenly
o Place the first layer of frozen lasagne
o Add 700g of bolognaise on the lasagne, spreading it with a rubber spatula
o Add 150g of bechamel on the bolognaise
o Place the second layer of frozen lasagne
o Add 700g of bolognaise on the lasagne, spreading it with a rubber spatula
o Add 150g of bechamel on the bolognaise
o Place the third layer of frozen lasagne
o Add 700g of bolognaise on the lasagne, spreading it with a rubber spatula
o Add 150g of bechamel on the bolognaise
o Place the fourth layer of frozen lasagne
o Add 700g of bolognaise on the lasagne, spreading it with a rubber spatula
o Add 150g of bechamel on the bolognaise
o Place the fifth layer of frozen lasagne
o Répartir 500g de béchamel sur la feuille de lasagne
o Spread evenly 200g of the cheese mix on top
• Make the lasagne golden brown in a combisteamer at 180°C with hot air for around 30 minutes
Suggestion:
• A GN tray 1/1 will make 12 portions
• Some clients enjoy the addition of tomato sauce
