Margarine (without animal additives) 0.200 kg
Onions, chopped into 3mm cubes 1.000 kg
Garlic, chopped 0.100 kg
Sliced white champignons 5.000 kg
White cooking wine 2.000 l
Tap water 5.000 l
Full cream 35% 1.000 kg
Vegetable bouillon powder vegan 0.100 kg
Gravy powder, vegan 0.500 kg

• Prepare all the ingredients

Method:
• Melt the margarine in an appropriate pot
• Cook the onions in the margarine
• Add the mushrooms and garlic and cook
• Deglaze with white wine and reduce by half
• Add the water, cream, powdered bouillon and the gravy powder
• Bring everything to the boil and season with pepper and salt
• Blend the sauce without lumps with the gravy powder
• Thicken the sauce with the Roux
• Let the sauce simmer over low heat for 5 minutes
• At the same time, raise the temperature and add the rapeseed oil to an appropriate frypan or wok
• Cook the chunks on all sides in the hot oil until crusty
• Strain the fried chunks with a strainer
• Serve immediately

Suggestion:
• Enhance this dish with some freshly chopped parsley
• Crunchy Swiss röstis and carrots are the classic sides with this dish
