• Prepare all the ingredients
• Cook the sauce according to the recipe
• Prepare the vegetables according to the recipe

Preparation for cold delivery
Pasta and sauce mixed
• For each GN 1/1 tray, add 2kg of frozen pasta and 1.34l of sauce and mix
• Deliver the hors d’œuvres and peas according to the house concept
• In the delivery kitchen
o Cook the pasta for 8 minutes in a preheated combisteamer oven at 130°C and 100% steam
o Cook the hors d’œuvres in a preheated combisteamer oven for 10 minutes at 180°C and with hot air
o Finish the vegetables in a preheated combisteamer oven for 5 minutes at 120°C and 40% steam

Pasta and sauce separate
• For each GN 1/1 tray, pour 50ml of rapeseed oil, 2kg of frozen pasta and mix
• In the delivery kitchen
o Cook the pasta in a preheated combisteamer oven for 8 minutes 95°C and 100% steam
o Cook the hors d’œuvres in a preheated combisteamer oven for 10 minutes at 180°C with hot air

o Finish the vegetables in a preheated combisteamer oven for 5 minutes at 120°C and 40% steam
