Preparation
Preparation:• Prepare all the ingredients
• Cut the old bread into cubes
• Cut the smoked tofu into cubes
• Prepare the creamy forest mushroom sauce according to the recipe
• Blanch the julienned vegetables and transfer them to a blast chiller
Method:
• Cook the chopped onions and the tofu in the margarine until golden
• Deglaze with the oat drink. Add the onions and tofu and bring to the boil once
• Put the bread cubes in a bowl and pour over the tofu-onion-oat mix. Let sit for 10 minutes
• Mix the salt and pepper, nutmeg, corn starch and crushed flax seeds
• Add the spice mix and the bread mix
• Carefully knead the bread mix so as to blend in the pieces of bread
• Let rise for around 15 minutes
• Wrap the mix in tea towels like small meatloaves check if you’re happy with this here
• Attach the loaves with kitchen string like a roast
• Cook the « baby meatloaves » in a preheated 90°C combisteamer with 100% steam for around 40 minutes until the meatloaves are firm
• Bring to the boil the creamy forest mushroom sauce and add the julienned vegetables
• Unwrap the meatloaves and slice
• Plate all ingredients and garnish with the chopped parsley
Suggestion:
• Depending on the type of bread, and how old it is, a little more oat drink may be necessary for the mix
• Napkin dumplings leftovers are great, browned in margarine
