Preparation
Preparation:• Prepare all the ingredients
• Prepare the organic tomato sauce according to the recipe
Method:
• Cook the Beluga lentils al dente according to the package instructions
• Mix the diced carrot with the salt
Suggestion:
• Prepare the recipe with carrots rather than with the Palatinat turnips
Preparation for cold delivery
Pasta, carrots and sauce mixed
• Per GN 1/1 tray, put 2kg of frozen pasta with 0.4kg of diced carrot, 100g of cooked Beluga lentils and 1,34l of sauce. Mix and pour into the GN tray
• Deliver the mozzarella pearls according to the house concept
• In the delivery kitchen: cook the fresh pasta for 8 minutes in a 130°C combisteamer and 100% steam and garnish with the mozzarella pearls
Pasta, carrots and sauce separately
• Per GN 1/1 tray, add 50ml of rapeseed oil, 2kg of frozen pasta and 0,4kg of diced carrots, and 100g of cooked lentils and mix well
• In the delivery kitchen: freshly cook for 8 minutes in a 95°C combisteamer and 100% steam
• Deliver the sauce and the mozzarella pearls according to the house concept
Preparation for warm delivery Cook and Serve
Pasta, carrots and sauce mixed
• Per GN 1/1 tray, put 2kg of frozen pasta with 0.4kg diced carrots and 100g of Beluga lentils 1,34l of sauce. Mix and pour into the GN tray
• Deliver the mozzarella pearls according to the house concept
Pasta and sauce separately
• Per GN 1/1 tray, pour 50ml of rapeseed oil, add 2kg of frozen pasta 0,4kg of diced carrots, 100g of well-cooked lentils
• In the delivery kitchen: freshly cook in a 95°C combisteamer for 8 minutes and 100% steam
• Deliver also the sauce and the mozzarella pearls, according to the house concept selon le concept
